Cake White Iced

Here the dessert super simple as I did for Christmas Eve.
It is inspired by blown glossy LenĂ´tre.


This is the recipe for a big cake for 8-10 people:

First step: meringues.

You can make your lazy, and buy ready-made meringues.
With my new toy, make meringue is a breeze.


You will need:
  • 6 egg whites (room temperature)
  • few drops of lemon
  • 3 packets of vanilla sugar
  • between 300 and 350 grams of sugar (to your convenience)
Add the egg whites with lemon. snow. Your meringues will be brighter.
Beat the whites. When
have tripled in volume, add the 2 types of sugar.
Continue beating until mixture is smooth.

Train your meringues with a pocket socket.


Put in an oven already hot at 80 ° C. The meringues should
dry, not cooked.
If your oven is too hot, they go brown.
To keep them very white, they must remain long in a warm oven.
Leave for 2 hours. They will crisp well.

(If you prefer the softer inside, leave about 1:30).

For white cake, they must be thoroughly dry.


When they are ready and cooled, break-in a large amount roughly. Do not too small. It takes about 300 g. Keep to the prettiest decorations.

Step 2: Cream Meringue

You need:
  • 90 cl whipping cream (3 blocks)
  • 2 packets of vanilla sugar
  • 90 g icing sugar
Whisk in the robot cream well chilled. Quickly add the 2 types of sugar.
You get a good thick cream well.

Add the meringue pieces.
Mix well but not too long.
Pour into pan with removable bottom or a circle pastry.
Put in freezer overnight.

When serving, you will need:
  • of red fruit sauce (raspberry for me)
  • fresh red fruit
  • few meringues
Remove the cake a quarter of an hour before eating. Pour the slurry and add fresh red fruit and meringues.
I tested with raspberries and blackberries.
